Sook-Yin Lee and Adam Litovitz make Beef Stew in their Instant Pot

Litovitz-Lee Instant Pot Beef Stew

Sook-Yin and Adam use their Instant Pot a lot.  They put whatever they have in their kitchen into their “delicious machine” and dinner’s ready.  This stew changes depending on what’s in the fridge, but it is a combination of root vegetables, other vegetables, spinach and beef from one of Toronto’s finest butchers: Sanagan’s.

 

Ingredients:

1/2 onion, chopped

3 cloves garlic, minced

1 large carrot, chopped

2 potatoes, chopped

1 sweet potato, chopped

2 cups stewing beef

2 handfuls spinach

1 tbsp of your favourite spices (Georgian spice mix- Kharcho- consists of saffron, curry, salt, ground red pepper, coriander)

fresh herbs (Sook-Yin and Adam used oregano, thyme and rosemary)

 

Method:

Chop onion, garlic, carrots, potatoes, sweet potatoes and beef, and saute in the Instant Pot on the SAUTE setting for a couple of minutes.  Add water, spices and herbs until it’s just under the MAX line and set to STEW setting.  It took about 32 minutes for the bell to sound and the excitement to begin.  Use according to Instant Pot instructions, and allow the pot to depressurize while you wash the spinach.  When the lid is ready to remove, add spinach and allow to wilt.  Serve with extra herbs as garnish!
