Chef Miriam Streiman’s Grilled Cheese Sandwich
Ingredients:
- a variety of cheeses (Miriam used a number of Monforte cheeses including a Water Buffalo cheddar, aged Water Buffalo cheese, Toscano, and a couple of other flavours that all added something different to the sandwich). Feel free to experiment!
- good, hearty bread
- softened butter
- grainy mustard
- pepper
- thyme and rosemary stems
- other ingredients Miriam recommends depending on your taste: sliced tomato, mushrooms, mayonnaise, roasted garlic, any desired charcuterie, an egg
Method:
- slice or grate enough cheese to make a good sized pile– Miriam used lots of cheese!
- butter the bread on both sides, and on the crust
- slather some mustard on the inside of one slice, and crack some pepper, too
- heat up a frying pan on medium/medium-high heat
- add another knob of butter to the pan, and then place the sandwich on the melted butter
- add the thyme and rosemary sprigs to the pan
- press the sandwich with a heavy lid to increase the crispiness and to ensure the cheese melts evenly and everything sticks together
- check the bottom of the sandwich, and when it’s cooked to your liking, flip it onto the herbs
- press with the lid again until the bread is crispy and golden
- serve with the herbs as garnish, or without
